Gluten Free Banana Bread

  • 3 Overripe bananas
  • 1/3 cup melted dairy-free butter
  • 3/4 cup white sugar
  • 1 egg (beaten)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • A pinch of salt
  • 1 1/2 cups of AKN Organics Cassava flour
  1. Pre-heat oven to 170° C and grease a loaf pan.
  2. Mash the overripe bananas in a bowl until smooth and add melted butter.
  3. Add baking soda, baking powder and salt then mix together.
  4. Add and stir the sugar, egg and vanilla extract.
  5. Sift and add the AKN Organics Cassava flour into the mixture
  6. Pour the batter into a prepared loaf pan and bake for 50 minutes or until a fork inserted in the middle comes out clean.
  7. Remove the loaf pan from the oven and allow it to cool. (Or if you like it hot, sneak a slice and enjoy with butter and cuppa on the side)
